What Is Tripotassium Citrate?

Tripotassium citrate is the potassium salt of citric acid — three potassium atoms replacing the three acidic hydrogens. Sold commercially as the monohydrate, CAS 6100-05-6, it is a white granular crystal or fine powder, freely soluble in water, and it carries E332. When a specification says simply “potassium citrate,” this is almost always the material it means.

The potassium citrate formula is K3C6H5O7·H2O with a molecular weight of 324.41 g/mol. The anhydrous form, CAS 866-84-2, is 306.40 g/mol — a difference worth checking if you dose by weight.

Holds pH steady as a formulation shifts, without adding sodium. Paired with citric acid it forms a citrate buffer — the same system as sodium citrate, for products where the sodium load matters.

2. Potassium fortification

Delivers potassium in electrolyte drinks, sports and clinical nutrition, and reduced-sodium formulations. More soluble and better tasting in solution than potassium chloride, which is why beverage formulators reach for it.

3. Sodium replacement

As reduced-sodium reformulation continues across processed foods, potassium citrate substitutes for sodium citrate in buffering and emulsification without the bitterness potassium chloride can introduce.

4. Sequestration

Binds trace metal ions that catalyse oxidation, protecting colour and flavour and extending shelf life in beverages and oils.

Why Non-GMO Potassium Citrate Must Be Imported

Potassium citrate is made from citric acid, so its non-GMO status is inherited from the acid it started as. That is the whole story.

All three citric acid producers operating in the United States — Cargill, ADM and Primient — ferment corn, and the overwhelming majority of US corn is genetically modified. Citrate made from that acid cannot carry Non-GMO Project verification, regardless of who neutralises it or where.
