What Calcium Citrate Is Used For

Three jobs in a formulation: calcium fortification, buffering, and firming. Calcium fortification is the dominant use by volume.

Calcium fortification

Calcium citrate is the preferred calcium source where the product is acidic or where absorption matters — fortified beverages, plant-based dairy alternatives, nutrition powders and clinical nutrition. It does not need stomach acid to dissolve the way calcium carbonate does, and it does not carry carbonate’s chalky mouthfeel.

Buffering and firming

Secondary uses include pH buffering in the same systems as the other citrate salts, and as a firming agent in canned and processed vegetables where calcium stabilises pectin.

The solubility constraint

Calcium citrate is sparingly soluble — around 0.1 g per 100 ml of water at room temperature, versus freely soluble for sodium and potassium citrate. In a clear beverage that means suspension rather than solution, so it is normally specified for opaque systems, powders and tablets, or paired with a suspending agent.
