SOURCING REALITY
What Is Non-GMO Erythritol, and Why Is It Harder to Find?
Erythritol is not extracted from anything. It is fermented — yeast converts glucose into erythritol, which is then crystallised and purified. So the non-GMO question is not about erythritol at all. It is about the glucose.
Commercial glucose is overwhelmingly corn-derived, and the overwhelming majority of corn grown for it is genetically modified. That is why most erythritol on the market cannot carry a non-GMO claim, and why buyers keep asking whether non-GMO erythritol is made from corn. Usually, it is.
Non-GMO erythritol requires a segregated, documented feedstock — non-GMO corn, or a different starch source entirely — held separate through fermentation, crystallisation and packing. That supply chain costs more to run, which is the whole of the price difference.
It is the same problem we solve on citric acid, for the same reason: an ingredient where the manufacturing process is identical everywhere and the only meaningful variable is what went into the tank.

What Erythritol Is Used For
Three properties drive nearly every application: it is sweet without sugar, it adds bulk that high-intensity sweeteners cannot, and it does not raise blood glucose.
Sugar reduction with bulk retained
Stevia and monk fruit deliver sweetness but no volume, so removing sugar leaves a formulation short of solids. Erythritol fills that gap — which is why it appears alongside high-intensity sweeteners in most reduced-sugar systems rather than on its own.
Beverages and confectionery
Reduced-sugar and zero-sugar drinks, chocolate and confectionery, chewing gum and mints. The endothermic dissolution gives a cooling effect that formulators either exploit deliberately in mint applications or mask in others.
